Slow cooked Nyonya curry

Ingredients

1 onion, diced

4 boneless chicken thighs

1 jar Nyonya curry paste

1 lemongrass, diced

2 cups chicken stock

1 cinnamon stick

2 tablespoons fish sauce

1 tablespoon olive oil

1 large carrot, diced

1 cup diced potato

1 cup diced cauliflower

Method

  1. Heat the olive oil in a frypan and medium heat.

  2. Add the chicken thighs and cook on both sides until they are cooked through.

  3. Add the chicken, onion, lemongrass, Nyonya paste, chicken stock, cinnamon stick and fish sauce.

  4. Cook on low for 6 hours.

  5. Add the carrot, cauliflower and potato. Cook for 2 hours on low.

  6. Serve by itself or with rice. Sprinkle with fresh herbs.
