Balsamic roast chicken (GF and DF)

This is a simple but tasty marinade made with ingredients you probably already have in your cupboard #cheapeats. I add this chicken to salads for my work lunches or enjoy with steamed veggies for dinner.

Balsamic roast chicken

Ingredients

2 chicken breasts

¼ cup balsamic vinegar

1 teaspoon olive oil

1 clove garlic, minced

1 teaspoon maple syrup

½ lemon juice and rind

½ teaspoon parsley

Sprinkle of salt

Method

  1. In a bowl, combine the balsamic vinegar, olive oil, garlic, maple syrup, lemon juice, rind and salt.

  2. Marinade the chicken breast in the balsamic mix, place in a container and pop it in the fridge for 1 hour.

  3. Preheat the oven to 180 degrees.

  4. Place the chicken breasts on a baking tray, drizzle with any leftover balsamic marinade.

  5. Bake in the oven for 45 minutes or until the chicken is cook through.

  6. Sprinkle with parsley.

  7. Enjoy!
