Herb stuffed baked mushrooms (GF and DF)

I think this has to be one of my favourite recipe creation! It’s so delicious and a great easy option for breakfast, lunch or dinner. It’s GF and DF! 

Herb stuffed baked mushrooms

Ingredients

4 Portobello mushrooms

1 cup fresh basil leaves

¼ cup pine nuts

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 clove of garlic

Sprinkle of salt

Method

  1. Preheat oven to 175 degrees Celsius.

  2. Line a baking tray with baking paper.

  3. Blend basil, pine nuts, olive oil, lime juice, garlic and salt.

  4. Place mushrooms on the baking tray, top with basil mix and drizzle with olive oil.

  5. Bake for 15 minutes or until the mushrooms are cooked.

  6. Enjoy!
