Baked pumpkin

When I know I have a busy week ahead I like to prepare ingredients that I can keep in the fridge and use as I need it. One of my favourite ingredients to pre-make is roast pumpkin because you can eat it on its own or add it to a meat meal as a side dish.

This recipe is super easy to make, although if you get sore joints like me, you may need some help cutting the pumpkin or you can opt to buy pre-cut pumpkin.

Ingredients

1 small Kent pumpkin

Olive oil

Fresh parsley, chopped

Balsamic vinegar glaze

Method

  1. Pre heat the oven to 200 degrees or 180 degrees fan forced.

  2. Line a baking tray with baking paper.

  3. Cut the pumpkin into wedges and place evenly on the baking tray leaving space between each piece of pumpkin.

  4. Drizzle olive oil over the pumpkin.

  5. Bake in the oven for 40 minutes turning halfway until the pumpkin is tender.

  6. Remove from the oven and drizzle with balsamic glaze and sprinkle with fresh parsley.

  7. Enjoy!
