Beef burger bowl with sweet potato fries

If you are craving a juicy burger but you are trying to be healthy or you have food intolerances, this burger bowl is the perfect alternative. You can enjoy all your favourite burger ingredients without feeling sick after you eat it.

This recipe is part burger part salad haha! The best of both worlds.

Ingredients

300g beef mince

1 clove garlic, minced

2 tablespoons fresh parsley

2 cups lettuce

1 avocado, mashed

Β½ cup fresh pineapple, chopped

1 onion, finely sliced

2 tablespoons coconut sugar

1 sweet potato

Olive oil

Salt and pepper

Method

  1. In a bowl, combine the beef mince, garlic and fresh parsley. Season with salt and pepper.

  2. Divide the mixture into two portions and shape into a burger patty.

  3. In a frypan on medium heat, add the olive oil. Once hot, add the beef patties cook on one side until brown, then flip to cook the other side until the meat is fully cooked.

  4. Remove from the pan, leaving the juices. Add the onion and coconut sugar and cook until the onion is soft and caramelised.

  5. Assemble your burger bowl with your lettuce, beef patty, onion, sweet potato fries, pineapple and avocado.

Sweet potato fries

  1. Peel the sweet potato and cut into sticks.

  2. Place evenly on a baking tray.

  3. Drizzle with olive oil and season with salt.

  4. Bake in the oven on 180 degrees for 15 minutes.

  5. Turn the fries and bake for another 15 minutes.

  6. Enjoy!
