Slow cooked beef with cauliflower mash (GF and DF)
Slow cooked beef with velvety cauliflower mash is the perfect nourishing meal to enjoy on a cooler day. There are so many ways you can cook beef like this with different ingredients to create a cosy meal, however I have tailored this recipe to suit those who are looking for an AIP, GF or DF recipe.
I love slow cooking meat because it becomes so tender. The trick to mastering slow cooked meat is to brown it in a fry pan first before transferring it to the slow cooker and leaving to cook on low for 6-8 hours.
Ingredients
500g beef chuck steak, cut into pieces
2 tablespoons olive oil
1 brown onion, diced
2 cloves garlic, minced
250mls beef broth or stock
2 tablespoons red wine vinegar
4 fresh thyme sprigs
2 dried bay leaves
Β½ head cauliflower
2 tablespoons coconut cream

Method
Heat 1 tablespoon olive oil in a large frying pan over medium heat. Add the beef and cook until brown. Transfer to your slow cooker.
Add the onion and garlic to the frypan, cook until softened and transfer to the slow cooker.
Add the beef broth, vinegar, thyme and bay leaves to the slow cooker.
Cook on low for 6-8 hours or on high for 4 hours.
Discard the thyme and bay leaves, season with salt and pepper and serve with mashed cauliflower and steamed broccolini.

Place the cauliflower mash, coconut cream and a pinch of salt in a blender and blend until smooth.
