Zucchini fries (GF and DF)
Are you craving a plate of hot chips? Try these healthier zucchini fries instead. They are crisp and crunchy on the outside with juicy zucchini inside. They will definitely satisfy your craving!
This recipe is so versatile and you can experiment with it using different vegetables including sweet potato and parsnip. Itβs also gluten-free and dairy free!
Ingredients
4 zucchinis
1 egg
ΒΌ cup gluten free flour
Β½ cup gluten free bread crumbs
ΒΌ cup teff flakes (or replace with more bread crumbs)
Method
Cut the zucchinis into wedges and pat dry with paper towel.
In a bowl, combine the gluten free bread crumbs and teff flakes.
In a second bowl, whisk the egg until beaten.
In a third bowl, add the cornflour.
Take each zucchini wedge and coat with flour, egg then bread crumbs.
Place the wedges in an air fryer and lightly spray with olive oil.
Cook on 180 degrees for 6 minutes, turn and then cook for another 6 minutes until golden.
