Pasta salad with homemade pesto (GF and DF)

I love a good pesto pasta salad. It’s a great way to use up leftover ingredients in your fridge. If you haven’t started making your own pesto this is your sign to make it.

Ingredients

1 packet of gluten free spiral pasta

1 punnet of baby tomatoes, halved

1/2 cup black olives, seeds removed and chopped

1/4 cup lactose free feta, chopped

1/2 cup of pepitas

1/2 cup fresh continental parsley

1/2 cup fresh Basil

1 lemon, juiced

1 clove of garlic

1/4 cup olive oil

Sprinkle of salt

Method

  1. Cook the pasta following the packet instructions.

  2. In a blender, combine the pepitas, parsley, basil, lemon, garlic, olive oil and salt. Blend until smooth.

  3. Combine the pasta, pesto, tomatoes, olives and feta.

  4. Enjoy!
