Chicken lettuce cups (GF and DF)

These chicken lettuce cups are a tasty option for lunch or dinner. They work really well with a sturdy lettuce leaf – I used baby cos which was perfect!

Ingredients

250g chicken mince

1 tablespoon coconut aminos

2 cloves of garlic, minced

½ teaspoon onion powder

Baby cos lettuce leaves washed and separated

1 carrot, grated

1/4 purple cabbage, thinly sliced

1 teaspoon of your choice of oil

2 spring onions, finely sliced

Method

  1. In a frying pan on medium heat, add oil and garlic. Cook for 1 minute.

  2. Add the chicken mince, and separate it as it cooks.

  3. Once the chicken mince is cooked, add the onion powder and coconut aminos. Cook for one minute.

  4. Add the carrot and cabbage. Cook until softened.

  5. Place the outer lettuce leaves on a plate and fill with the chicken mixture.

  6. Top with spring onions to serve.

  7. Enjoy!
