Chicken and vegetable soup (GF and DF)

This has to be my favourite chicken and vegetable soup! It’s so wholesome and filled with nutritious ingredients. I make it when I’m sick or if I feel like I need a little pick-me-up. I definitely recommend making this delicious soup.

Chicken and vegetable soup

Ingredients

2 roast chicken breasts, shredded

1 carrot, chopped

4 celery stems, chopped

2 leeks, thinly sliced

1 tablespoon minced garlic

1 teaspoon grated ginger

1 bunch of continental parsley, chopped

2L chicken stock

Salt

Method

  1. In a large pot, add leek and cook until soft

  2. Add garlic and ginger, cook for 1 minute

  3. Add carrot and celery, cook until soft

  4. Add chicken breast, salt and parsley

  5. Add stock and bring to the boil

  6. Reduce heat and simmer for 1 hour.

  7. Enjoy!
