Chickpea salad (GF)

Chickpea salad

Ingredients

2 tablespoons lemon juice

1 clove garlic, minced

3 tablespoons olive oil

1 cup cherry tomatoes, sliced

1 cucumber, sliced

1 cup chickpeas

½ red onion, thinly sliced

1 avocado, diced

¼ cup coriander, sliced

½ cup feta, crumbed (I used lactose-free feta)

Sea salt and pepper

Method

  1. In a large bowl, combine the tomatoes, cucumber, chickpeas, red onion, avocado, coriander and feta.

  2. Make the dressing by whisking the lemon juice, garlic, olive oil, salt and pepper.

  3. Add the dressing to the salad and stir through.

  4. Enjoy!
