Chicken, beetroot and avocado salad

Ingredients

2 cups baby spinach and rocket

1 chicken breast

Chicken seasoning of your choice, I used black garlic and rosemary

1 tablespoon olive oil

1 fresh beetroot

ΒΌ avocado, sliced

1 tablespoon chopped pecans

Method

  1. Coat the chicken in your chosen seasoning and drizzle with olive oil.

  2. Bake in the oven until the chicken is cooked through, let it rest then slice.

  3. Place the spinach and rocket in a bowl, top with the chicken, beetroot, avocado and chopped pecans.

  4. Enjoy!
