Apple, fennel and walnut salad (GF and DF)

This apple, fennel and walnut salad is light, fresh and tasty. It’s one of my favourite salads to enjoy in summer as a side dish. If you haven’t tried this salad combination then I’d recommend trying it out. You won’t be disappointed.

Ingredients

1 fennel bulb

1 granny smith apple

2 celery stalks

2 tablespoons of olive oil

Salt and pepper

5 walnuts

Method

  1. Thinly slice the fennel, apple and celery on a mandolin.

  2. Chop the walnuts.

  3. Place the walnuts in a cold frypan and then cook on medium heat. Starting with a cold pan will ensure your walnuts don’t burn.

  4. Place lemon and salt in a bowl and begin to whisk. While you whisking, slowly add the olive oil.

  5. Combine all the ingredients in a bowl and enjoy!
