Beef and pumpkin curry (GF and DF)

Indulge in the warm, comforting flavours of this slow cooked beef and pumpkin curry recipe. Tender chunks of beef, slow cooked to perfection in a fragrant blend of spices, coconut milk and aromatic herbs. This is a super tasty curry that is also easy to make.

Ingredients

500g beef chuck steak, cut into pieces

1 tablespoon olive oil

3 tablespoons red curry paste

4 cloves garlic

1 brown onion, diced

1 can coconut milk

500ml beef stock

2 tablespoons fresh lime

1 zucchini, cut in pieces

Β½ pumpkin, skin removed and cut in small pieces

1 bunch fresh coriander, chopped

Method

  1. In a large frypan on medium heat, add the olive oil, onion and garlic. Cook until fragrant.

  2. Add the beef to the frypan and brown on both sides.

  3. Turn the slow cooker on low and add the onion, garlic and beef.

  4. Add the beef stock and red curry paste.

  5. Cook on low for 6 hours.

  6. Add the pumpkin and zucchini, cook for 1 hour.

  7. Add the coconut milk and lime juice, cook for a further 30 mins.

  8. Serve with rice and fresh coriander.
