Thai beef salad (GF and DF)

Indulge your taste buds with this fresh Thai beef salad. Tender slices of marinated beef with a medley of fresh vegetables and aromatic herbs all tossed in a zesty dressing. This Thai beef salad recipe is the perfect option for lunch or dinner.

Ingredients

1 piece of good quality steak (I used scotch fillet)

2 tablespoons olive oil

3 tablespoons of coconut aminos

Β½ fresh lime, juiced

1 shallot, finely sliced

ΒΌ cup fresh mint, finely chopped

1/3 cup coriander, finely chopped

2 cups rocket

1 cucumber, halved and then cut up

3 baby tomatoes, halved

Crushed peanuts

Salt

Method

  1. Season the steak with salt on both sides.

  2. Heat olive oil in a frypan, once hot, place the steak into the frypan. Cook the steak to your liking.

  3. Once the steak is cooked, remove it from the frypan and let it rest.

  4. While the steak is resting, make the salad dressing by combining the coconut aminos, lime juice, 1 tablespoon coriander and half the shallot. Whisk with a fork.

  5. Thinly slice your beef.

  6. Construct the salad by placing the rocket, tomato, cucumber, mint, coriander, beef and shallot into a bowl. Drizzle with the dressing and sprinkle with the crushed peanuts.

  7. Enjoy!
