Slow cooked beef rendang (GF and DF)
Prepare your taste buds for a flavour explosion with this easy and mouth-watering slow cooked beef rendang recipe. Packed with a medley of aromatic spices and tender beef, this dish is definitely one to share. This recipe is also gluten and dairy free!
Ingredients
500g Beef chuck steak, fat removed and cut into 2cm pieces
Β½ cup desiccated coconut
1 stick lemongrass, finely sliced
1 tablespoon fresh ginger, grated
1 tablespoon olive oil
4 cloves garlic, minced
2 chilies, finely chopped
1 brown onion, finely diced
2 teaspoons ground coriander
1 tablespoon coconut sugar
2 tablespoons fresh lime juice
1 cinnamon stick
Method
Process the coconut, lemongrass, garlic, ginger, chilli, brown onion and olive oil into a paste.
In a frypan on medium heat, brown the beef, then add to the slow cooker.
Add the spice paste to the frypan and heat until fragrant. Add to the slow cooker.
Add the ground coriander, cinnamon stick, lime juice and coconut sugar to the slow cooker.
Cook on high for 4 hours.
Stir through the coconut milk and cook for 1 additional hour.
Serve with spring onions, coriander and rice.
