Classic chicken salad

Ingredients

¼ cup roast chicken breast

2 cups lettuce mix

¼ cup baby tomatoes

¼ cup cucumber

2 tablespoons black olives

¼ avocado

1 spring onion

2 tablespoons Marion’s kitchen Thai basil lime and coconut dressing

Method

  1. Cut up the tomatoes, cucumber, black olives, avocado and spring onion.

  2. Place the lettuce in a bowl, top with all the salad ingredients and drizzle with dressing.
