Falafel and salad nourish bowl (GF)

If you’re in need of a super quick and healthy salad that you can make for lunch, this recipe is for you! Let’s be honest, there is no real cooking involved and all you need to do is prepare and combine the ingredients. If you’d prefer, you can make your own falafels but it’s also ok to buy them pre-prepared like I did.

Ingredients

2 cups baby spinach

4 – 6 falafels (I used the sweet potato falafels from Yumi’s)

2 tablespoons lactose free feta

¼ cup diced cucumber

¼ cup diced tomatoes

1 tablespoon diced red onion

¼ cup pitted black olives

2 tablespoons hummus

 

Method

  1. Prepare the falafels.

  2. In a bowl, add the baby spinach followed by the falafels, feta, cucumber, tomatoes, red onion, black olives and top with hummus.

  3. Enjoy!
